What “Fresh Daily” Actually Means at Salad House

Almost every restaurant says the word fresh somewhere on its menu. At Salad House, we want to be specific about what that word actually means for us, because it’s the whole reason the food tastes the way it does.

It Starts With What Doesn’t Happen

Nothing at Salad House is prepped days in advance. Nothing sits in a walk-in cooler waiting for next week’s rush. And nothing gets carried over into tomorrow’s service. That last part is the one most restaurants skip. It’s also the one that matters most.

Why Carrying Ingredients Over Is a Problem

Produce that sits for even one extra day loses texture and flavor. Dressings separate. Proteins dry out or get reheated. None of that shows up as a health risk. It just makes food taste like it’s been sitting, because it has.

What We Do Instead

Every morning, our kitchen preps that day’s produce, dressings, and proteins from scratch. Whatever doesn’t get used that day doesn’t get held for tomorrow. It’s more work. It’s also the only way a Cobb Salad or a Blackened Chicken Wrap actually tastes like something.
